Ingredients:

For Marination:

  • 300 grams of Mutton
  • Salt (As per taste)
  • 1/2 tsp Turmeric powder
  • 1 sp Red chilli powder
  • 1 sp Garam masala powder
  • 1 sp Ginger-garlic paste
  • 1/4 cup of Curd

For Cooking:

  • 1 cup of Soaked Basmati rice
  • 1 Onion
  • Tomato
  • Green chillies
  • Mint leaves
  • Coriander leaves
  • 1 cup of Water
  • Ghee
  • Oil
  • 1 sp Coriander powder
  • 1 sp Garam Masala powder
  • Salt (As per taste)
  • Bay leaves, Star Anise, Mace
  • Cinnamon, Cardamom, Cloves
  • 1 tsp Shahjeera
  • 1 sp Ginger-garlic paste
  • 1 cup Boiled Mutton water
  • 1/2 cup of Water

Marination:

To marinate the mutton, take the mutton in a bowl and add salt, turmeric powder, red chilli powder, garam masala, ginger-garlic paste, curd and mix it well. Keep it aside for a while.

Procedure:

1. Firstly, take a cooker and fry the mutton in oil. Add a cup of water to this and cook it for 5-8 whistles.

2. Separate the water from the mutton and keep them aside.

3. Now, in a cooker, add some oil and ghee. Once, they are heated, add bay leaves, star anise, mace, cinnamon, cardamom and cloves. Also, add 1 tsp of Shahjeera and temper them well.

4. Once they are nicely tempered, add onions, green chillies, ginger-garlic paste, and give it a nice stir. Once, the onions are cooked, add tomatoes and let it cook for a few minutes.

5. Then, add the boiled mutton and mix it well. To this, add salt, red chilli powder, garam masala powder, mint leaves and mix it well.

6. Once the masalas have nicely seeped into the mutton, add the water in which the mutton was boiled earlier, along with half a cup of freshwater.

7. When the water comes to its boiling point, add a cup of soaked basmati rice. Also, add coriander leaves and mix it all well. Cook it for 2 whistles.

8. Your delicious Mutton Pulao is now ready. Serve it with raita!
