Watch: How To Make Hyderabadi Style GuthiVankaya Biryani!

Sinfully delicious, Guthi Vankaaya Koora is a popular brinjal dish from the Telugu speaking states. The Indian palate often needs masalas and spices and honestly, if there is anything that can make your spicy palates happy, it is this Stuffed Brinjals curry only. Stuffed with masalas, it is a blast of flavours in your mouth.

It is usually served with white rice, or roti, this is that one dish which is loved by everyone. But, what if we told you, that you could make biryani with Gutthi Vankaya? Sounds crazy, right? So, learn how to combine your two favourite dishes with this easy recipe. We’re sure you just cannot stop with one plate.

Ingredients:

For the Masala Stuffing:

  • 500 grams Brinjal
  • 2 Onions
  • ½ cup Peanuts
  • 2 sp Sesame Seeds
  • 4 Cardamom
  • 1 sp Cumin Seeds
  • Cloves
  • Cinnamon
  • 1 sp Coriander Powder
  • 1 sp Red Chilli Powder
  • Salt (As per taste)
  • ½ tsp Turmeric Powder
  • Ginger
  • Garlic

 For the Curry:

  • ½ cup Curd
  • Salt (As per taste)
  • ½ tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • For Cooking The Rice
  • Lemon Juice
  • 2 Green Chillies
  • 1 Bay leaf
  • 1 tsp Shahjeera
  • 4 Cardamom
  • Salt (As per taste)
  • 2 tsp Ghee
  • 1-1/2 cup of soaked Basmati Rice
  • Mint leaves
  • 1 tsp Ghee
  • Coriander leaves

Marination:

Firstly dry roast peanuts and sesame seeds separately and cool them down. Once, they are cooled, add them to a grinder. Also add cardamom, cloves, cumin seeds, cinnamon, coriander powder, red chilli powder, salt, turmeric powder and grind it into a fine powder.
Add, ginger and garlic to the powder and grind it again.
Cut the Brinjals in a plus shape and generously stuff them with this masala powder.

Procedure:

1. Thinly slice the onions and fry them until they turn golden brown. Once, they are deep-fried keep them aside.

2. Take a pan and fry the stuffed brinjals. Cook, it covered for 5 minutes. Then, turn the brinjals to the other side and add the leftover masala to it. Cook this again for 5 minutes.

3. While the brinjals are being cooked, take a bowl and add curd, turmeric powder, salt, lemon juice, red chilli powder and give it nice whisking. Add this mixture to the brinjal fry and give it a nice stir. End it by adding some fried onions to it.

4. Now, in a bowl, add some water. When the water is slightly heated add bay leaf, green chillies, shahjeera, cardamom, salt, ghee and soaked basmati rice. Also, add a few mint leaves and let it cook till the rice is 70% done. Strain the rice from the water.

5. In a pan, add some ghee, a layer of rice, a layer of fried onions and coriander leaves, a layer of Stuffed Brinjals, a layer of fried onions and coriander leaves and finally a layer of rice. Repeat this if you have more rice and Guthi vankaya curry. On the final layer, add some ghee, fried onions, coriander leaves and cook for about 10 minutes on low flame.

6. Your delicious Guthi Vankaya Biryani is now ready to be served!
