This Sankranthi, Try Your Hand In Making Pickles At Home!

Festive season is just around the corner. And we can already smell the aroma of our favourite local dishes in the air. Be it the Payasam or the Pulihora, Sankranthi is all about good food. And what better than some Pacchadi and Papads to add to this merry?

Pickle making has been an ancient tradition in India. Didn’t we all grow up watching our grandmothers and mother make it? They are a part of our everyday food and honestly we can’t do it without them. The process of making pickles might look tedious, but that is entirely false. You can make these easy and simple Vegetable pickles in your home, right away.

1.Cauliflower Avakaya

Cauliflower is easily one of everyone’s favourite vegetable. And to make its pickle, is fun and super delicious to eat.

Ingredients:

2 Cups Cauliflower

1 Glass Red Chili Powder

1 Glass Mustard Powder

3/4th Glass Salt

2 tsp Fenugreek Seeds

2 tsp Turmeric

2 tsp Fenugreek Powder

8 tsp Sesame Oil

8 to 10 pods ofGarlic

Procedure:

Firstly, mix all the Masala powders into a fine mixture.

Add Garlic to the mixture and let it sit for a while.

Now, take two cups of raw, cleaned and dried Cauliflower, add the masala powder and mix it together.

Add 4 tsp of Sesame Oil to it and mix them well.

Shift this to a new bowl and add another 4 tsp of Sesame Oil.

Lastly, add two tsp of Lemon juice to it. Mix it and let it sit for a while.

The oil, lemon juice and the masalas will work together and make the cauliflower crispy and crunchy.

2.Munagakaya Avakaya

Drumsticks are easily available in the market and apart from adding flavours to the curries and Sambar, they also make a great pickle.

Ingredients:

2 Cups Drumsticks

1 Glass Chilli Powder

1 Glass Mustard Powder

3/4th Glass Salt.

2 tsp Fenugreek Seeds

2 tsp Turmeric

1 tsp Fenugreek Powder

8-10 pods of Garlic

2 tsp Lemon Juice

7 tsp Sesame Oil

Procedure:

Mix all the Masala Powders together.

Add Garlic to this mixture and let it sit for a while.

Take 2 cups of cut, cleaned and dried Drumsticks and mix it well with the Masala mixture.

Add 2 tsp of Lemon juice and 4 tsp of Sesame Oil and mix it well with the mixture.

Shift the contents to another bowl and add another 3 tsp of Sesame Oil.

Let the contents sit for a while and your delicious bowl of ‘MunagakayaPachhadi’ is ready.

3.Usirikaya Pacchadi

Usirikaya or Gooseberries is perhaps found in almost every Indian household. Its unique flavors are liked by everyone. It is also super easy to make.

Ingredients:

½ kg Usirikaya or Gooseberries

1 tsp Mustard Seeds

1 tsp Fenugreek Seeds

15 to 20 pods of Garlic

2 tsp Mustard Seeds

2 tsp Bengal Gram Seeds

1 tsp Jeera Seeds

5 to 6 Dried Red Chillies

1 tsp Asafoetida

Curry leaves

¼ Cup Chilli Powder

¼ Cup Salt

1 tsp Turmeric

Procedure:

Slightly slit the Gooseberries to the center. (This is for the Masala to enter the vegetable.)

Take a pan and fry the Mustard and Fenugreek seeds and grind them to a fine powder.

Take 5 to 6 Garlic pods and grind them into a fine paste.

Now, take a pan, add some oil and fry the Gooseberries till they are slightly glassy.

Shift the Gooseberries to a bowl.

Now in the same pan, add Mustard, Bengal Gram, Jeera, Red Chillies, Asafoetida and curry leaves. Fry these together and keep the tempered mixture aside.

Now, take the fried Gooseberries in a bowl and add ¼ cup of chili powder, ¼ cup of Salt, a mixture of Mustard and Fenugreek seeds, 1 tsp of Turmeric, ¼ cup of Tamarind pulp, and tempered mixture and mix it well.

Your Usirikaya Pacchadi is now ready to be served.
