It can be made in very different ways, a simple way to prepare it to let the leftover cooked rice soak in a little water mixed with curd along with simple seasonings like onions and green chillies.
Lemon Rice is a quick, refreshing and an easy dish to prepare, just take a pan with a little oil and add mustard seeds, red chilli, hing and curry leaves along with nuts and chana-urad dal, after a while add the leftover rice and squeeze fresh lemons according to taste, stir well and let it cook for a while. Veg Fried Rice
This is the perfect recipe to utilize leftover rice, this is a tasty recipe which your kids will definitely enjoy. Firstly, in a large pan heat 2 tbsp oil and stir-fry 2 clove garlic. Add onions to the pan and cook them till they turn a little brown, furthermore add vegetables of your choice like carrot, cabbage, peas, beans, capsicum. stir fry on high flame without overcooking vegetables. now add 2 tbsp soy sauce and 1 tbsp vinegar. stir-fry until the sauce is combined well. keeping the flame on high, add cooked rice. Now add pepper and salt according to taste. Stir-fry by mixing well making sure rice grains won’t break. finally, enjoy veg fried rice.
Coconut is delicious recipe which is perfect if you’re looking to have a light meal. Heat oil in a pan, add mustard, dals and cashews. When the dal turns golden, add ginger, green chili, curry leaves and red chili. Sprinkle hing. Add coconut and sprinkle salt on it. Then add rice. Off the heat. Stir everything well. Fry till the garlic is lightly fried. Add chopped veggies, spring onions and fry them for about 3 to 5 minutes depending on the size, reduce the flame to medium. Pour eggs and scramble them and cook till they are lightly done. Sprinkle pepper, salt and vinegar, combine everything well and cook till the eggs are fully cooked. Once the eggs are cooked, add rice and mix. If needed add little more oil, Fry on the highest flame for about 2 to 3 minutes. Garnish egg fried rice with some spring onions and serve.
