When we speak of Sambar, we need to mention its strong flavours. The vegetables and the freshly ground masalas work very well and add a kick to the dish. But cooking Sambar can be quite a process. And, if you are looking for an easy alternative then here is an authentic Andhra-style Onion Sambar recipe which can be prepared in a short time.

Ingredients:

Prep:

  • ½ cup Pigeon Peas
  • 1 and ½ cup Water
  • ¼ tsp Turmeric Powder

Sambar Masala:

  • Oil
  • 1 tsp Bengal Gram
  • 1 tsp Black Gram
  • 1 tsp Coriander Seeds
  • 1 tsp Fenugreek Seeds
  • 5 Dried Red Chillies
  • Curry Leaves

Samabar:

  • 1 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • ¼ tsp Hing
  • Curry Leaves
  • 1 cup Shallots
  • 1 Drumstick
  • 3 Green Chillies
  • 2 cups Water
  • Tamarind Water
  • Salt
  • ¼ tsp Turmeric Powder
  • 1 tsp Red Chilly Powder
  • 1 tsp Jaggery
  • Coriander Leaves

Procedure:

1.Firstly, soak 1 cup of Pigeon peas for an hour. Then in a cooker take the soaked pigeon peas, water, turmeric powder and cook for 3 whistles.

2.You need to prepare Sambar masala now. To do that, take a pan, add some oil, and fry Bengal gram, coriander seeds, fenugreek seeds, dried red chillies, and curry leaves. Make sure that you fry them till they slightly change colour. Cool the mixture and grind it to a fine powder.

3.Now, take a pan and add some oil. To this add cumin seeds, mustard seeds, hing, curry leaves and temper them. Once they are tempered, add shallot onions and fry them. Then add drumsticks, slit green chillies, and cook for 5 minutes on a medium flame.

4.Transfer the contents to a hollow vessel and add water to it. Add tamarind paste, which is 2 tsp tamarind paste mixed with ¼ cup of water. Now, add the boiled pigeon pea paste, salt, turmeric, red chilly powder, and give it a nice mix.

5.Once the water reaches its boiling point, add the ground masala powder and mix it. Cook for 10 minutes on a low flame.

6.Finally add jaggery and garnish the sambar with coriander leaves.

7.Your Onion Sambar is now ready to be served.
