But, what is the best part about the City of Pearls? Its glorious Hyderabadi Dum Biryani for sure. So, here’s an easy recipe to cook the famous Chicken Dum Biryani.
Ingredients:
- 1kg Chicken
For Fried Onions:
- 1 cup Onions
For Garam Masala Powder:
- Cloves
- Cardamom
- Cinnamon
- Bay leaves
- Star Anise
- Fenugreek
- 2 tsp Shah Jeera
- Star Anise
- Pepper
- Stone Flower
For Marination:
- Lemon Juice
- 1 cup Curd
- Green Chilli Paste
- 3 tbsp Red Chillie Powder
- 1 tsp Coriander Powder
- 1 tbsp Cumin Powder
- 2 tbsp Turmeric Powder
- 2 tbsp Ground Masala Powder
- Salt (As per taste)
- 1 cup Mint Leaves
- 1 cup Coriander Leaves
For Cooking The Rice:
- 700gms Basmati Rice
- 3 litres Water
- 2 tsp Shah Jeera
- 2 Bay Leaves
- Cinnamon
- Cardamom
- Cloves
- Pepper
- Stone Flower
- Salt (As per taste)
- 2 tsp Oil
Biryani:
- Ghee
- Oil
- Saffron
- Lemon Juice
- Mint Leaves
Procedure:
1.Firstly, take a pan add some oil and fry thinly sliced onions. Fry them till they turn golden-brown. Make sure you fry enough onions for marinating and cooking.
2.Now, you have to prepare garam masala. For that, take a pan and dry roast cloves, cardamom, cinnamon, bay leaves, fenugreek, shah jeera, star anise, pepper, and stone flower. Once they are roasted, grind them to a fine powder.
3.For the marination process, take 1 kg chicken, add a dash of lemon juice, 3 tbsp ginger-garlic paste, 1 cup curd, green chilli paste, 3 tbsp red chilli powder, 1 tbsp cumin powder, 1 tbsp coriander powder, 2 tbsp turmeric powder, 2 tbsp ground garam masala, salt as per taste, 1 cup mint leaves, and coriander leaves. Mix it well and add a cup of fried onions to it. Keep it aside for at least half an hour.
4.Now, take a cooker and add 3 litres water. Add shahjeera, cardamom, cinnamon, cloves, stone flower, salt, mix it well and let the water boil. Once the water boils, add oil and soaked basmati rice. Cook it till the rice is 80% done. When it is done, keep the rice aside.
5.To cook the biryani, take a huge vessel and add chicken to it. Also, add a cup of ghee to it and spread the chicken evenly. Add required oil to it and spread the cooked rice evenly onto the chicken. Make tiny holes in the rice and add lemon juice and ghee into the holes. Then, add a dash of saffron on the rice. Add fried onions, mint leaves and spread it evenly on the rice.
6.Seal the corners of the vessel with dough and cover it properly without letting the air escape from the vessel. Cook it on medium flame for 30 minutes.
7.Your Hyderabadi Style Dum Biryani is now ready. Serve it with raita or mirchi ka salan.
