‘Tis the season to be jolly!!!
With Christmas around the corner along with scrolling through all the beautiful Christmas trees decorations and the same being decorated at home. To level up your Christmas spirit, you want to have a good old piece of plum cake. In the scary case of having a difficult time finding the right kind of plum cake look no further as we have got you covered with a delicious plum cake recipe that you can make at the comfort of your home without an oven!
Now, let us look at all the ingredients we need for the recipe:
- Grape juice or orange juice ( 3/4 cup)
- Tutti Frutti (1 cup)
- Dry fruits (1/2 cup)
- Baking soda (1/2 tsp)
- Wheat flour (1 cup)
- Cornflour (1/2 cup)
- Baking Powder (1 tsp)
- Cocoa powder (2 tsp)
- Cinnamon powder (A pinch)
- 3 Eggs
- Brown sugar (1 cup)
- Veg oil (3/4 cup)
- Vanilla Extract / Vanilla Essence
- Orange zest (2 tsp)
The first step into baking a plum cake is to soak the dry fruits and tutti frutti in a bowl of grape juice/orange juice with a pinch of baking powder and let it soak for about an hour.
While they soak, let us move on to mixing all our dry ingredients, remember to strain them which helps in removing the dirt.
In a bowl, add wheat flour, cornflour, baking powder, cocoa powder, a pinch of cinnamon powder, and mix very well. Ensure that all of them are fine powders, this aids in better mixing.
The next step is to beat our eggs, whisk them up until they are fluffy and feel like a cloud. It is recommended to use an electric whisker to avoid any injuries. Now to the fluff of eggs, add brown sugar and mix well again.
After which, add in all the dry ingredients and soaked dry fruits to the egg fluff slowly and ensure that it is continuously whisked to ensure a smoother mixture.
Finally, spread it in your cake mould and drop it into a pre-heated pressure cooker for 40-50 minutes without a whistle and pierce the cake to check if it all baked!
If the toothpick comes out neat and clean! You can enjoy your favourite plum cake at the comfort of your own home!
