So, how do we send nutrients to our kids while making the food super delicious? Now, if you are feeling stressed out about it, don’t you worry as we have two delicious Lunchbox recipes for you all.

1.Oats Pongal

Oats and Dal are tasty and high on nutrients. They are packed with vitamins, minerals, proteins, enzymes and amino acids making them a complete food. They fight infection and also promotes digestion. Try making this Oats Pongal and we are sure your kids will love it.

Ingredients:

  • 1 cup Husked Green Gram
  • 1 cup Plain Oats
  • 2 cups Water
  • Salt (As per taste)

For tempering:

  • 2 tsp Ghee
  • Cashew nuts
  • 1 tsp Cumin Seeds
  • 1 Green chilly
  • ¼ tspAsafoetida
  • 1 tsp Pepper
  • Curry leaves

Procedure:

  • Firstly, take husked green gram and dry roast them until they turn golden-brown. Keep them aside and dry roast oats till they turn golden-brown too.
  • In a cooker or a vessel, cook the husked gram till they turn soft and mushy. Also, cook the oats in a pan till they become soft. Add the cooked gram and mix these two well. Add salt to this, give it a nice stir before turning it off..
  • Now, take a tempering bowl, add some ghee and roast cashew nuts in it. Then add cumin seeds, green chillies, asafetida, pepper and curry leaves. Once, they are tempered, add this mixture to the Oats Pongal and mix it well..
  • Serve your Oats Pongal hot.

2.Beetroot Pulao

Packed with essential nutrients, beetroots are great sources of vitamins, minerals, and iron. They are often associated with several health benefits like improved blood flow and boosting immunity. It is also said that they improve concentration and promotes memory power. And sincemost kids do not prefer to eat beetroots in the form of curry or fry, there is no better way than this Pulao to serve them beets.

Ingredients:

  • 1 cup Grated Beetroot
  • ½ cup Green Peas
  • 1½ cup Soaked Basmati Rice
  • 1 Onion
  • 3 Green Chillies
  • Mint leaves
  • 2 tsp Ghee
  • 2 tsp Oil
  • Cloves, Cardamom
  • Cumin Seeds
  • Mace
  • Bay leaf
  • 1 tsp Ginger-garlic paste
  • Salt (As per taste)
  • 3 cups Water

Procedure :

  1. In a cooker, add ghee and oil. To this add, cloves, cardamom, mace, bay leaf, cumin seeds and fry them. Once they are tempered, add onions, green chillies, ginger-garlic paste, salt and cook till the onions are nicely fried.
  2. Now, add grated beetroot and green peas to it. Cook till the beetroots become soft. Once, the vegetables are cooked, add soaked rice and a handful of mint leaves and give it a nice mix. Add water, and cook it for three whistles.
  3. Your nutritious and healthy Beetroot Pulao is now ready to be served.
